Mexico wedding resorts are generally the most common places to get married if you're not from there. You can definitely explore the other options with a wedding planner that could give you more variety but that obviously means more expenses outside the realm of resorts.
You need to do a lot of careful research here and my list of resorts may be short here but trip advisor has some great options for you as well as destination weddings.
You can also check with Sun Wing airlines and other vacation agencies who do a lot of group bookings. Resorts love wedding bookings because it's a huge part of their business so try looking for discounts with your big group bookings.
If going with a resort wedding photographer or videographer just know that you're going to get what you pay for. They might be able to give you a few shots that look pretty good but generally they're not going to be a professional that you can research, chat with and hire.
With no disrespect intended but most of the video and photo services at the resorts are people that are hobbyists and will capture your day. However you shouldn't expect to get blown away by any of it.
